Suite101.com seems to have a lot of recipes and general baking knowledge that I have not yet fully perused. This recipe comes from their site, and I really like how they added baking tips along with the regular recipe information. I will be using more recipes from their site.

My alterations
I tried to follow this recipe faithfully, except for halving the entire thing. Baking four bread loaves was a bit too much for this at-home project! All my own measurements are noted alongside the recipe in bolded italics.
I also underestimated how many lemons I would need for the zest, so I ended up with only 1 tablespoon worth of zest rather than the required 2.
The Results
I couldn’t wait to try this cake! As I was mixing the batter, the lemon smelled wonderful, and it smelled even better while it was baking.
Even though I halved the lemon syrup recipe, I felt that it was too much. I pricked the cake all over and poured the warm sauce on it, and the cake ended up being far too soggy for my liking. The cake itself tasted lovely, but the sauce was too overpowering and took over the cake.
The Verdict
I love lemon cake, and this cake did not disappoint. I will definitely be keeping this recipe, but with a few minor alterations. Next time I bake it, I will use more lemon zest (as long as my husband is willing to do the grating!) and less lemon syrup. I might even try it without the syrup at all.
I agree with the recipe – this cake would make a perfect gift. The lemon flavour isn’t too strong, so I think it would appeal to a large number of people.
The recipe states that the cake will freeze well, so I’ve popped half of it in the freezer to test it out. More to come later.

This cake would have definitely ranked at 5 stars if there wasn’t too much syrup on it. The syrup made the cake stickier and heavier than I would have liked.
