My kids love Winnie the Pooh. We sing his morning exercise song on a regular basis:
When I up, down, touch the ground, it puts me in the mood
Up, down, touch the ground, in the mood… for food!
Etcetera…
So when I found a recipe for honey cake, I knew I had to try it, you know, for the children.

The Recipe
1 cup butter
2 cups honey
2 eggs, beaten
1 cup buttermilk
1 tsp salt
4 cups flour
2 tsp baking soda
1 tsp ginger
1 tsp cinnamon
Cream butter and honey well. Add beaten eggs, buttermilk, flour-sifted with soda, spices and salt. Mix well and bake in 2 layers at 275 for about 30 minutes. Watch closely, honey cake burns very easy
My Alterations
I probably should have halved this recipe, because I ended up with a massive round cake, and about 18 little muffins. I should probably halve all of the recipes I make, because my freezer is getting full!
I tasted a bit of the batter before baking, and it was understandably very sweet. The honey flavour was very strong, even though I used a bit less than the full 2 cups of honey called for. (two 340g jars yielded about 1 3/4 cups honey) To balance out the honey flavour, I added some of my frozen raspberries to the mix. I spooned a bit of batter into the muffin cups, squished a frozen raspberry into the batter, and spooned a bit more over the top to cover the berry. I put several frozen berries in the large cake as well as serving it with berries on top.
The Result
The cake itself is wonderful. It’s soft but a nice dense mouthful, and has a very distinctive taste. The recipe instructions worked well, and even though the cake was baked at a very low temperature (I set my oven at 140C) it baked in a decent amount of time.
The sharpness of the berries balanced out the strong honey flavour in the cake nicely. I was very pleased with the final result.
The Verdict
This is a great cake. The honey flavour is strong, and I probably could have used a bit less honey without compromising the taste at all. I really like buttery toast with honey on top, and this cake kind of reminded me of that. The berries were the perfect touch, if I do say so myself! This is a lovely afternoon tea sort of cake.
